“ Wow. This is far from your ATL chain Mexican. Behold the margarita flight. All the food here is made from scratch, literally everything. I recommend the mahi ceviche, mole, and cochinitas pork marinated for 24 hours. Ask for the picante salsa not the trio its quite bland. Foodies, just go ”

He was extremely kind and we never felt rushed. The atmosphere is great, the seats are comfortable, and the food was very well seasoned. It tasted like homemade food. We will definitely return! We ordered ceviche, the flight of margaritas, and the molcajete. All were delicious! ”

We were seated incredibly fast, even without a reservation, which was a fantastic surprise, given how busy the restaurant was. The service was outstanding—our server, Nancy - was attentive, knowledgeable about the menu, and even asked about food allergies, which made us feel genuinely cared for. Our drinks came out in no time, and I have to mention the horchata—hands down the best I’ve ever had. Perfectly balanced, smooth, and refreshing! The food followed shortly after, and considering how bustling the place was, the wait time was impressively short. Every bite was packed with flavor, and the portions were just right. “ My wife took me to Consuelo with the promise of the best guacamole she had ever eaten. She was absolutely correct. The restaurant has very comfortable vibe. Our waiter, Santiago was extremely polite, professional and knew the menu like the back of his hand. I had the enchiladas verde, per his request and it was the best meal I’ve had in Gainesville in a long time. We can’t wait to go back to try more of this incredible food! “ One of the best dining experiences I have ever had. Amazing cocktails, food and ambiance. The bartender Tito was making killer cocktails and always with a smile on his face. The best of all was our server Santiago. When Santiago greeted us at the table we new this was going to be an amazing experience. He just lights up the room with his warm smile. We had several of the dishes and also tried the Margarita flight which I highly recommend. Finished the evening off with Tres Leche which I normally do not like. This was over the top and I loved it. If you get a chance to go to Consuelo’s you will not regret ”
